Banana and Choc Chip Loaf


This is a nice moist loaf that freezes well. Soft bananas are especially good in this recipe.



·         130g soft butter

·         230g caster sugar

·         3 medium eggs

·         3 ripe, mashed bananas

·         300g choc chip focaccia mix

·         1tsp baking powder

·         2tbsp milk


You will need a 1KG loaf tin



1.      Lightly grease the loaf tin and line it with baking parchment.

2.      Preheat oven to 190°C.

3.      Place all ingredients into a mixing bowl and whisk up for about two minutes, until everything is well distributed and creamy.

4.      Spoon the mixture into the baking tin and smooth the surface.

5.      Bake for about one hour, until lightly risen and golden. I skewer should come out clean when inserted into the loaf.

6.      Leave to cool for five to ten minutes then turn out onto a cooling rack to cool completely.
