Cranberry and Orange Bread

 This loaf is moist and packed with flavour. Just right for breakfast, dessert or snacking.



         300g white loaf mix

        100g  granulated sugar

        1 teaspoons baking powder

        ½ teaspoon salt

        60g unsalted butter, softened

        Grated zest or two medium oranges

        180ml orange juice

        1 large egg

        180 g chopped cranberries (fresh or frozen)


Orange Glaze (optional)

        180g icing sugar

        1½ tablespoons orange juice



1.      Preheat oven to 190°C.

2.      Grease a 1KG loaf tin

3.      Combine flour, sugar, baking powder and salt.

4.      Add butter and mix until crumbly.

5.      Stir in the zest, juice and egg. Mix until combined.

6.      Fold in the cranberries.

7.      Pour batter into the prepared tin and bake for 50-60 minutes or until a skewer comes out mostly clean.

8.      Allow the bread to cool in the tin for 30 minutes then remove to a wire rack to cool completely.

9.      Once the bread is cool pour on the glaze and get tucked in!
